Abstract

CONSTITUTION: The objective freshness keeping agent consists of a deoxygenating agent and an adsorbent containing adsorbed carbon dioxide. When the pressure in the packaging container is lowered by the effect of the deoxygenating agent, the carbon dioxide adsorbed to the adsorbent is desorbed to attain the N2/CO2 gas balance in the system of 80%/20%. Carbon dioxide gas has bacteriostatic activity and prevents the bacterial degradation of foods, and at the same time, since the internal pressure of the container is maintained to 1 atm by the release of CO2, the collapse of the container can be prevented.
