Abstract

PURPOSE: To prepare a MISO containing embryo buds without an offensive taste and smell, by adding water to embryo buds of grains, e.g. rice, barley and wheat, to give a specific proportion of initial moisture content in the preparation of KOJI, and brewing the resultant KOJI containing the embryo buds are soybeans as principal raw materials.
CONSTITUTION: Water is added to embryo buds of grains, e.g. rise, barley and wheat, which are raw, roasted, defatted or free from a grassy smell after the heat treatment, to give an initial moisture content of 20W30% in the preparation of KOJI. The resultant KOJI containing the embryo buds and soybeans as principal raw materials are brewed by the conventional method.
