Abstract

PURPOSE: Processed noodles are dipped in an aqueous solution of trisodium or tripotassium phosphate to give chinese noodles with high storability and improved taste.
CONSTITUTION: Chinese noodles are boiled or steamed by a usual method and dipped in an aqueous solution of 0.05W1.5% trisodium or tripotassium phosphate or thereof additionally containing 0.5W5% ethanol. Then, the noodle are immediately wrapped and, when necessary, heat treated. The treating solution is adjusted so that the pH of the noodles becomes 9.5W10.5.
