Abstract

PURPOSE: Noodle are treated with water kept alkaline to permit the storage of noodle with no adverse effect on the quality.
CONSTITUTION: Water is adjusted in pH to higher than 9.4 by adding thereto at least one selected from alkali metal carbonates such as sodium carbonate, hydroxides such as calcium hydroxide and alkaline phosphate salts, when necessary, glycine, ethanol and propylene glycol. Boiled or stamed noodles are dipped in the above solution for a certain time.
