Abstract

PURPOSE: To obtain granular food having excellent solubility and dispersibility, and high specific volume and crushing strength, by adding a binder and a vehicle to a mixture of powdery animal raw material and a seasoning, conditioning the moisture of the mixture, and foaming the mixture by rapidly extruding through the nozzle of a screw extruder at high temperature.
CONSTITUTION: A powdery animal raw material (e.g. meat and/or extract of fish, shellfish, livestock, and poultry) is used as the main raw material, and is optionally mixed with a seasoning. A vehicle and/or a binder (e.g. grain flour, starch, dextrin, lactose, sucrose, egg white, soybean protein, gelatin) are added to the raw material in an amount of 2W80wt%, and the water-content of the mixture is adjusted to 5W30%. The objective food granules are obtained by extruding and foaming the mixture through the nozzle of the screw extruder at 80W200°C. The process gives the product having excellent solubility and dispersibility, high specific volume and crushing strength, and excellent fluidity, appearance, taste, flavor, etc.
