Abstract

PURPOSE: To make it possible to mold a dough for an oily or fatty confection having the fluidity mechanically, by adding a liquid alcohol or alcoholic solution to a dough for the oily or fatty confection having the fluidity, and imparting the shape retaining property to the dough.
CONSTITUTION: An oil or fat or nut paste is mixed with a raw material, e.g. a saccharide or dairy product, to give a dough for an oily or fatty confection, having the fluidity, and containing 30% or more amorphous oil or fat. 2W15% liquid alcohol, e.g. ethyl alcohol, glycerol, propylene glycol, an aqueous solution thereof or alcoholic solution, e.g. brandy, rum or whisky, is mixed with the resultant dough for the oily or fatty confection to impart the shape retaining property thereto. The resultant mixture is then molded mechanically by an extrusion molding machine.
