Abstract
PURPOSE: To obtain a defatted edible part, fat and oil of good quality, by taking a fish to pieces of edible and nonedible parts, freezing the pieces at 0°C or below, extracting fat and oil with a liquid petroleum hydrocarbon at 80°C or below, and removing the hydrocarbon from the solid material and extract respectively.
CONSTITUTION: A fish is taken into pieces and separated into edible and nonedible parts, and frozen respectively at 0°C or below to break the cellular membranes by the freezing of the moisture. The fat and oil are extracted with a liquid petroleum hydrocarbon at 80°C or below. After the extraction, the extract and the solid material are separated, and the hydrocarbon is removed from the respective extract and the solid material to give a defatted edible part, defatted nonedible part and fat and oil. The hydrocarbon can be reused. The defatted edible part, nonedible part and fat and oil are of good quality respectively, and usable for food, animal feed, raw materials for soap, etc. After taking the fish body into pieces and before or after the defatting treatment, NH3 is added to the edible and nonedible parts, which are then kept at a pH of 10W12 or a deodorant is added thereto to remove the fish smell better.
