Abstract

PURPOSE: To obtain the titled high-purity substance having small browning and coloring, by saccharifying a starch liquefied solution having a specific DE value with glucoamylase and isoamylase in a specified pH range.
CONSTITUTION: Starch such as potato powder, maize starch powder, etc., having 10W50wt% starch milk concentration, is liquefied into a relatively low DE value, e.g., <15, and adjusted to a pH of 3.5W4.8. The liquefied solution is treated with glucoamylase derived from the genus Aspergillus, etc. and isoamylase derived from the genus Flavobacterium, etc. at 50W60°C so that it is saccharified. After the saccharification is over, the solution is heated to deactivate the enzymes, filtered, decolored, sent to a purification process for desalting by an ion exchange resin, etc., so that it is concentrated, to collect syrup with a high content of glucose.
