PURPOSE: Japanese plums, from which hearshness has been removed, are dipped in a salt solution containing alum then sugar is added thereto to make trasty and discoloration-free plum preserved in sugar.
CONSTITUTION: Raw Japanese plums are dipped in a 20% sodium chloride solution containing calcium chloride, magnesium chloride and alum for 24hr, then taken out of solution and stones are removed. The reactant plums are placed in a vessel together with the same amount of sugar and pressed. The exudate is separated, combined with sugar, concentrated and cooled. The resultant exudate is added to the plums and stood for abount 2 months to give the objective plums preserved in sugar.
