Abstract
PURPOSE: To prepare L-lactic acid efficiently and to make this process suitable for industrialization, by using a bacterium mold (immobilized lactic acid bacteria) capable of producing L-lactic acid, immobilized on a gelatinous carrier.
CONSTITUTION: Lactic acid bacteria such as Streptococus faecalis IFO 3865, etc. are cultivated in glucose, yeast extract, peptone, etc. as a nutritive medium at 25W42°C at a pH of 4.5W6.5, and a condensed mold layer is formed at a position near to the gel surface, to give immobilized propagated lactic acid bacteria. This immobilized propagated lactic acid bacteria are subjected to catalytic reaction with a nutrient medium containing a ssccharide or an organic acid to prepare L- lactic acid. Glucose, sucrose, lactose, etc. may be cited as the saccharide as a raw material for producing L-lactic acid, and pyruvic acid, malic acid, etc. may be cited as the organic acid.
