Abstract

PURPOSE: To prevent the permeation of a cooling liquid into a material to be frozen and the damage thereof, by changing over the cooling steps with a gas and a liquid one after the other, forming a forzen layer on the surface of the material to be frozen, and cooling the material with the liquid.
CONSTITUTION: A material to be frozen is precooled by an air cooling apparatus consisting of a blower 4 and a ventilation duct 5 till the formation of a frozen surface layer on the whole surface of a material 7 to be frozen, and the operation of the air cooling apparatus is stopped. A three-way cock 11 is directly changed over to convert the operation into a cooling operation with a liquid to freeze the material 7 to the desired part thereof. A pump 21 is then operated to wash the freezing liquid from the frozen surface of the material 7.
