Abstract

PURPOSE: The titled solid product that is made by combining grains with soybean on which a lactic bacterium and a yeast are propagated followed by inoculating Rhibopus oligosporus to the mixture, thus increasing the nutrient value of soybean and showing smell and texture like meat.
CONSTITUTION: Soybeans whose skins are peeled off (20pts.) are combined with water (18pts.) and ground, boiled, cooled, then a lactic bacterium and a yeast are inoculated to the soybean product. Then, grains of, e.g., rice or wheat (10W 11pts.) are mixed with the product, they are heated, then cooled and Rhizopus oligosporus is inoculated and propagated on the mixture. Thus, the fermentation product is protected from various germs by the lactic acid formed from polysaccharides during the fermentation from the start to the completion to produce solid grain fermentation product utilizing all of the soybean constitutents.
