Abstract

PURPOSE: A processed fermented soybean food, prepared by enclosing semidried skinned fermented soybeans in wafers for bean-jam-filled wafers, having reduced smell and taste peculiar to the fermented soybeans, and easily estable alone by anyone.
CONSTITUTION: Raw material soybeans are parched lightly, skinned, inoculated with Bacillus natto and fermented to give skinned fermrented soybeans which are then semidried by the natural drying. About 25wt% raisins or about 10wt% honey or both are added to the resultant semidried fermented soybeans to give a lump of a given size. The lump is then enclosed in wafers for bean-jam-filled wafers.
