Abstract

PURPOSE: To obtain fat and oil emulsifying liquid which consists in interposing an emulsifier comprising bacterial gum and specific fatty acid esters to animal and vegetable fats and oils, and which is stable over a long period of time against the change in liquid characteristic and storage temp.
CONSTITUTION: Bacterial gum and various specific fatty acid esters are added as an emulsifier in the presence of water to the refined and deodorized animal and vegetable fats and oils (e.g.: rapeseed oil, whale oil) and the emulsification system is controlled to ≤6.5pH, whereby the intended fat and oil emulsifying liquid is prepared. Said bacterial gum is the gum base drawn from becteria (e.g.; bacteria belonging to xanthomon as genus). One or more of glycerine fatty acid ester, polyglycerol fatty acid ester, propylene glycol fatty acid ester, cane sugar fatty acid ester, sorbitan fatty acid ester are used for the fatty acid ester. The amounts of use for fats and oils are ≤5wt% the bacterial gum and ≤10wt% the fatty acid ester.
