Abstract

PURPOSE: An alkaline food made by culturing together with "Koji" and an acidic food made by smoking are mixed into a liquid or paste and aged, thus producing a novel type of food product with new types of taste and flavor from different raw materials in taste and flavor.
CONSTITUTION: Grains or starch is immersed in water and steamed. After cooled, the product is inoculated with Koji mold to make an alkaline food product.
