Abstract
PURPOSE: To obtain a completely powdery butter having a good flavor, by adding specific amounts of an emulsifier having a specified HLB, an alkali salt as an emulsification accelerator and a water-soluble protein to a fat consisting of butter or its mixture with other fats or oils.
CONSTITUTION: A fat consisting of butter or its mixture with other fats or oils is molten at 70W80°C, mixed with a lipophilic emulsifier, e.g. glycerol ester of a fatty acid, having an HLB ≤7 and dissolved. On the other hand, a hydrophilic emulsifier, e.g. sucrose ester of a fatty acid, and one or more types of alkali salts, e.g. NaCl, Na2HPO4, KCl or K2HPO4, as an emulsification accelerator in an amount of 5wt% or less based on the fat and cow's milk, skimmilk powder, casein, whey, gelatin or soybean protein as a water-soluble protein in an amount of 25wt% or less based on the fat are dissolved in water to form an aqueous solution. The solutions are mixed, emulsified and spray-dried to give a completely powdery butter having a good flavor. The powdery butter can be stored and transported without requiring a refrigerator. The HLB of the total emulsifiers is 7.0 or below, and the amount thereof is 10wt% or less based on the fat.
