Abstract
PURPOSE: To prepare an emulsified food having high resistance to rottenness caused by microoganisms, by blending an emulsified food base having an adjusted acidly in water of the base with paste.
CONSTITUTION: Vingar or acetic acid is added to an emulsified food base, e.g., mayonnaise, etc. so that the acidity in water of the base is adjusted to ≥2wt%, preferably 3wt%, while vingar or acetic acid is added to paste, e.g., tomato paste, curry roux, etc. so that the acidity in water of the paste is adjusted to ≥1.5wt%, preferably ≥2wt%. The emulsified food base with adjusted acidity in water is blended with the paste with adjusted acidity in water.
