Abstract

CONSTITUTION: The novel lipase having the following characteristics and obtained from the culturing product of bacteria belonging to Staphylococcus genus, e.g. Staphylococcus aureus 226 strain. (a) Substrate specificity; easily decomposes tributyrin, tricaprin, trilaurin and monoolein: (b) optimum pH; 6.0 for triolein and tributyrin: (c) optimum temperature; 60°C for triolein and 50°C for tributyrin: (d) pH stability; stable at pH≥5 for triolein and tributyrin, and deactivated rapidly at pH ≤4; (e) thermal denaturation; rapidly deactivated at ≥60°C and the deactivation is promoted by bivalent metal ions: etc.
