Abstract

PURPOSE: Ascorbic acid coated with a substance so that it melts only on the heating process is mixed to prevent food in tightly sealed package from deterioration and denaturation.
CONSTITUTION: When food tightly sealed in a vessel such as bottle, can, retort pouch or a bag made from plastic film of various kinds is produced, a processed ascorbic acid is added to the food in a range of 0.02W0.2wt% and they are tightly sealed and sterilized by heating. The processed ascorbic acid is prepared by coating ascorbic acid with a hardened oil melting at higher than 40°C through a usual process so that the resultant ascorbic acid does not melt at room temperature but melts when heated.
