Abstract

PURPOSE: To make the storage of fishes for a long time possible without salting and drying them, by soaking fish dried whole, its slices, etc. in salt water, removing water, drying it to a specific water content, sealing it up together with a disoxidant, storing it at about 0°C.
CONSTITUTION: Fishes, e.g., horse mackerels, sardines, etc. are washed with water if necessary. They are left as they are, or converted into fishes dried whole, fishes with their back open, fishes with their ventral sides open, or slices. The fishes are then soaked in salt water, water is removed, and the fishes dried to water content 50W80wt%, preferably 65W75wt%. The salt concentration of the salt water used is preferably 10W30wt%, and a slightly salted fish product with salt concentration 2W10wt% is preferable as the fish after drying. The fish product together with a disoxidant, e.g., iron, pyrogallol, etc. covered with a porous plastic film laminated on paper, etc. is sealed up in a nonporous packing material or an air-tight container, and stored at -8° to 5°C. The change of quality of protein and lipid will no occur, and the fishes can be stored for a long time in the form of salt dyring. Especially, the storage of slightly salted fish product which can not be stored hitherto becomes possible.
