Abstract

PURPOSE: To prepare a fruit wine having well-mellowed perfume with improved fresh fruit fragrance, having no unplesant smell, e.g., oxidation smell, burnt smell, etc., by adding 6C aldehyde and/or alcohol during the manufacturing process of fruit wine.
CONSTITUTION: In any stage of the manufacturing process of fruit wine by a conventional method, preferably during the treatment of raw materials or the fermentation of grape, 2W30ppm, preferably about 4W20ppm one or more compounds selected from the group consisting of 6C aldehyde, e.g., t-2-hexenal, n-hexenal, t-3-hexenal, and c-3-hexenal, and 6C alcohol, e.g., n-hexenol, t-2-hexenol, t-3- hexenol, and c-3-hexenal are added.
