Abstract

PURPOSE: To obtain the antibacterial fraction as an active constituent of a food preservative from bamboo grass, by treating leaves or stems of the grass with an alkaline aqueous solution and then with an enzyme, and by extracting the solution with an organic solvent.
CONSTITUTION: Leaves or stems of bamboo grass are rinsed with water, cut finely, and treated with an alkaline aqueous solution to soften the cell membranes of the grass to some degree, and adjusted to the desired pH with an inorganic or organic acid, then treated with an enzyme, e.g. cellulase, pectinase, or protease, to destroy the cells The aqueous phase or treated grass thus obtained by the inactivation of the enzyme, is extracted with a nonpolar or low polar organic solvent, e.g. ethyl acetate or hexane, to remove impurities, e.g. chlorophyll. The resulting antibacterial fraction is collected, and the obtained liquid, powder thereof, or supported on a carrier is used as a preservative for food.
