Abstract

PURPOSE: To prepare sour drink having excellent taste and flavor and good for the health, by treating soybean milk with protease, and fermenting the milk with lactic acid bacteria starter.
CONSTITUTION: Soybean milk is treated with protease (e.g. vegetable papain, fungi-protease, etc.) to convert 30W50% of the soybean milk protein to soluble protein (soluble in trichloroacetic acid). The enzyme-treated soybean milk is inoculated with a lactic acid bacteria starter (e.g. Streptococcus thermophilus, Streptococcus lactis, Lactobacillus bulgaricus, Lactobacillus acidophilus, etc.) and fermented under slow strirring (60W120r.p.m.) to obtain the objective soybean drink having suppressed protein coagulation tendency, and high resistance to protein separation.
