CONSTITUTION: Pasty batter such as kneaded wheat flour is constantly pumped to a reservoir 6 by a gear pump 4. By turning a transfer drum 22, the batter is attached to the relief part 38 of the drum 22, and squeezed by the surface of pipe 29 to introduce cooling water to the transfer drum 22 to attain a definite thickness. The thickness-regulated batter is transferred to the relief face 41 of baking drum 11, baked, and released with a scraper 37. The shape of the pastry sheet is defined by the shapes of the relief parts 38 and 41, and the thickness of the sheet depends upon the ratio of the revolutions of the transfer drum 22 and the baking drum 11. The process is suitable for the preparation of crepe, pastry shell of a fried dumpling stuffed with minched pork, etc.
