Abstract
PURPOSE: Using the same unit, the operations of washing rice, immersing, steaming, cooling rice and making "koji" are done, thus permitting the production of clean and contamination-free "koji".
CONSTITUTION: Polished rice or grain is sent with belt conveyor 34, 8, made to collide to plate 6 and scattered on the cultivation bed 11 and expanded by the rotation of the bed 11. Then, water is supplied from pipe 19 and rice is washed by passing water through holes on the bed 11 and immersed in water by filling water up to the level of overflow pipe 22. Susequently, the water is drained from drain outlet 21, damper 18-b is closed, damper 18-d is opened and steam is blown from pipe 20 through outlet 10 and the rice is steamed while the cultivation bed 11 is made to revolve. Then, damper 18-a is closed, damper 18-b is opened and the air is blown with blower 14 to cool the steamed rice. Finally, means 9 is operated to turn over the steamed rice and "koji" is inoculated.
