Abstract
PURPOSE: "Oshi-zushi", pressed sushi, consisting of rice treated with vinegar and pieces of fish meat that is washed with vinegar and is placed on the rice, is wrapped with "konbu" immersed in a flavor solution until served, thus being readily eaten without treatment and having good taste combination of oshi-zushi and konbu.
CONSTITUTION: "Konbu", sea tangle T, is washed with water or diluted acetic acid solution to remove contaminants. The resulting konbu T1 is cut into an appropriate sizes to give konbu T2, which is softened by immersing in a flavor solution to give processed konbe T3. Pieces of fish meat that is high fresh and washed with vinegar are placed on processed konbu T3 and sushi rice R1 that is prepared by mixing moderately steamed rice R uniformly with a vinegar composition V1 is spread on the konbu T3 in an equal thickness, then the konbu is rolled from the one end to wrap the sushi rice R1 and the pieces of fish meat F2. Thus, while the "oshi-zushi" is wrapped with "konbu" until served to eat, the specific and good taste of konbu penetrates into the sushi rice.
