Abstract

PURPOSE: "Oshi-zushi", pressed sushi, consisting of rice treated with vinegar and pieces of fish meat that is washed with vinegar and is placed on the rice, is wrapped with "konbu" immersed in a flavor solution until served, thus being readily eaten without treatment and having good taste combination of oshi-zushi and konbu.
CONSTITUTION: "Konbu", sea tangle T, is washed with water or diluted acetic acid solution to remove contaminants.
