Abstract
PURPOSE: To provide chocolate for the core of a baked cake, which does not shrink by baking nor harden by caramelization, by mixing chocolate with bean-curd refuse.
CONSTITUTION: Bean-curd refuse is dried, sterilized, and crushed to powder containing ≤10% of water and having particle size of finer than 200 mesh. The powdered refuse is mixed with chocolate. The total fat content of the mixture should be kept to ≤ about 25wt%, pref. 5W20wt%, esp. 8W15wt%, to maintain the appropriate fluidity of the chocolate.
