Abstract
PURPOSE:An aqueous solution of sodium alginate and a calcium salt-dispersing oil are mixed to form an oil-in-water emulsion and coagulated by standing, thus producing said granular food of fine particle size. CONSTITUTION:To 100 parts by wt of 0.5-3, preferably 1-2% concentration sodium alginate aqueous solution (A), are added 1-10 parts of a calcium salt-dispersing oil that is prepared by dispersing 1-5, preferably 2-3 parts of a calcium salt as calcium chloride or calcium lactate into 100 parts of a liquid oil under stirring to form an oil-in-water emulsion with coarse oil particles. The emulsion is coagulated by stading for 5-10min, thus giving said granular food of 0.3-0.7mm diameter.
