Abstract

PURPOSE: To decompose nucleic acids in microbial cells to taste-enhancing 5'- nucleotide, in high efficiency, and to take out the nucleotide from the cells.
CONSTITUTION: Frozen microbial cells are defrosted to obtain a water suspension. The suspension is heat-treated at 20W80°C while keeping its pH between 3.5 and 10.0. The nucleic acids in the cell are decomposed to 5'-nucleotide, and taken out from the cell. The heat-treated product is preferably adjusted its pH value, added with an adenylic acid deaminase to convert the 5'-adenylic acid to the effective taste-enhancing compound, 5'-inoxinic acid. The process is easily conducted under wide pH and temperature conditions, and microbial cells stored in a frozen state for a long time can be effectively used as the raw material.
