Abstract

PURPOSE: To recover proteins having high whiteness and suitable as raw materials of foods, by adjusting the pH value of waste water discharged from fish meat washing process between 1 and 2 or between 10 and 12, and removing the precipitated black-colored proteins from the waste water.
CONSTITUTION: Waste water discharged from the fish meat washing process, is adusted to pH 1W2 or pH 10W12, and the precipitate is separated and removed. The pH of the the waste water thus treated is again adjusted to 4W5, and the waste water is heated at about 70W90°C. The coagulater water-soluble proteins are recovered by centrifugal separation or filtration.
