Abstract

PURPOSE: To prepare improved unrefined soy having excellent filtering characteristics, in high yield, by storing unrefined soy at a specific low temperature while keeping the cellulase activity and the pectinase activity above specific values.
CONSTITUTION: Unrefined soy is cooled below 15°C, and charged into a fermentor while keeping the cellulase activity of ≥50 units/gram of the unrefined soy, and the pectinase activity of ≥5 units/grams of the unrefined soy. The mixture is heated and brewed by the conventional process, to give improved unrefined soy having excellent filtering characteristics with high utilization of the raw materials.
