Abstract
PURPOSE: To obtain pickles useful for health having a unique flavor with a little salt and acidity, by aqueezing bread crumbs immersed in cooled hot water firmly, and by pickling materials in the salted mass thus prepared.
CONSTITUTION: Bread crumbs (edge crusts) are finely cut, immersed in a cooled hot water, squeezed firmly, and then salted suitably. The amount of the salt is to the extent of about 10% based on the solid weight of the bread (before immersion in the water). Suitable materials are steeped in the pickling mass thus obtained, enclosed, stored in a cold and dark place, e.g. a refrigerator, and used for food.
