Abstract

PURPOSE:To prepare a fermented soybean (F) in an edible container, by using an integrated through process comprising adding a mucilaginous food of powdered F to rice flour as a main raw material, molding the mixture in a container of F, and making F from a boiled soybean placed in the container. CONSTITUTION:60pts. of flour comprising nonglutinous and glutinous rice is mixed with 40pts. of a mixture comprising starch and powdered fermented soybean prepared by rapid freeze-drying, kneaded with lukewarm water, mixed with common salt, sugar and a chemical seasoning, placed in a mold and lightly roasted. The mold comprises continuous six sections in three rows and two clumns, and each section is capable of containing about 30g of fermented soybean (F). A boiled soybean is placed in the container, inoculated with Bacillus natto diluted with water, and fermented in a fermentation chamber with the cover closed. The soybean is cooled previously to 40 deg.C to uniform the material temperature, and the chamber is heated to 38 deg.C and then reaches 50-52 deg.C after 8-10hr. About 13hr after the charging, the bacillus multiplication reaches the saturation of 1X10<8>, and the temperature falls gradually to make F in 15-17hr after the charging.
