Abstract

PURPOSE: To reduce the waxy smell and to improve the preservability of fish-paste product, by adding a specific amount of coated sorbic acid, coated ascorbic acid or sodium ascorbate to finished fish-paste.
CONSTITUTION: A fish-paste product is prepared from finished fish paste containing 0.05W0.2wt% of coated sorbic acid, or 0.02W0.2wt% of coated ascorbic acid or sodium ascorbate. The coated sorbic acid is prepared, e.g. by coating finely devided sorbic acid with a coating agent composed mainly of a vegetable or animal hardened oil having a melting point of 40W90°C and added with a saturated fatty acid, etc. The coated ascorbic acid can also be prepared in the same manner. The amount of the coating agent is pref. 0.8W3 parts per 1 part of sorbic acid or ascorbic acid.
