Abstract

CONSTITUTION:Washed old rice or far old rice (after two rainy seasons) is immersed in a solution of an enzyme, e.g., cellulase, hemicellulase, protease, or pectinase, derived from a mold of the genus Aspergillus, Rhizopus, or Trichoderma, adjusted to a pH of 4.0-5.5, at 20-50 deg.C for 30-60min. The rice is then taken out of the solution, washed and cooked.
