Abstract
NEW MATERIAL:Geometrical isomers 5-octene-1-ols of formula I: (R" is-COR'; R' is H, 1-5C alkyl, or 2W5C alkenyl group).
EXAMPLE: Useful for food, cosmetics, etc. as flavoring agents or modifiers having fruit-like, particularly apple-like fragrances.
PROCESS: Geometrical isomers 5-octene-1-ols are brought into contact with corboxylic acids, their anhydrides or halides of formula III: (X is-OH, halogen, or O; n is 1 when X is OH or halogen; n is 2 when X is O) in the presence or absence of a catalyst to give the desired compounds. cis-5-Octene-l-ol of formula IV can be obtained by catalytic hydrogenation of 5-octene-1-ol in the presence of a reduction catalyst.
