USE:Amphoteric surfactant, having low toxicity, no irritant to the skin, and extremely high safety rate compared with the known surfactants, e.g. alkyldimethylpentane, alkylimidazoline derivatives, etc. Useful for medicated soap, detergent for kitchen, etc. PROCESS:Glycerin aliphatic acid ester of formula II and N-protected aspartic acid or its anhydride are subjected to condensation to give glycerin aliphatic acid-N-protected aspartic acid ester and the protecting group of the ester is removed by an ordinary method, of a glycerin aliphatic acid ester of formula II and a mneral acid salt of aspartic acid anhydride are condensed in the presence of a base, to give the objective compound of formula I.
