Abstract

PROBLEM TO BE SOLVED: To obtain an excellent loquat tea with the fragrance/flavor and medicinal effect each inherent in loquat fruit, and enabling utilization of the fruit rinds having been treated as a waste so far. SOLUTION: Raw rinds 1 peeled off loquat fruits are thoroughly washed with water to remove the saccharide component inside the rinds, the resulting rinds are dried with a dryer 10 to effect dehydration equivalent to 95% water removal, the dried rinds 2 are cut/crushed into fragmentary/granular loquat fruit rind powder 3, which is then blended with 70 wt.% of black tea, thus obtaining the objective blend loquat tea.

杷の果実の成分は、血液を弱アルカリ性に変えて、自然
治癒力を高め、成人病、婦人病、自立神経失調病に効果
があるとされている。従来の枇杷の葉を用いた枇杷茶
は、枇杷果実に含まれている枇杷特有の香りがなく、枇
杷を感じさせることが少なく、風味・香りの点で充分で
なかった。

いることができる。又乾燥する前に果実の皮を細片に切
断し、その後乾燥させることもできるが、乾燥してから
の方が切断・破砕が容易となる。又、切断又は粉状・粒
塊状に破砕した枇杷果実皮粉は焙煎してもよいし、焙煎
しないでそのまま使用することもできる。又焙煎したも
のと焙煎しないものを混合することもあるし、あるい
は、他の茶と混合することもできる。枇杷混合茶の混合
する他の茶、乾燥果実粉としては紅茶,ルイボス茶,羅
漢果実粉,緑茶,ウーロン茶がある。混合する茶割合
は、その混合茶の品質・好み・消費者の好みに合せて適
宜決められる。

する。図1,2は本実施例の枇杷茶の製造工程の説明図
である。本実施例の枇杷茶は、枇杷の果実から剥した生
の皮1を1トンよく水洗し(図1(a)参照)、皮の内
側の糖分をよく除去し、その後回転ネットドラムを用い
た乾燥機10で熱風を与えて95%の水分を脱水した9
5kg程度の重量までに乾燥する(図1(b)参照)。
乾燥させた後、乾燥皮2を切断機と粉砕機でもって1〜
10ミリ程度の大きさに細片化し(図1(c)参照)、
その後乾燥した細片又は粉粒状の乾燥枇杷果実粉3を適
度に焙煎する(図1(d)参照)。焙煎した枇杷果実皮
粉4の100%の枇杷茶7と、紅茶5又は粉・細片状の
乾燥羅漢果粉6を混合した混合茶A,Bを作製した。こ
の100%の枇杷茶7と、表1の混合割合の混合茶A,
Bを複数人に試飲して、その試飲結果を下記に記す。
