チョコレートの製造方法
本発明はチョコレートの製造方法に関する。特に、本発明は従来方法よりも顕
著にエネルギーの節約を図れるチョコレートの製造方法に関する。本発明の方法
により良好な良味特性および柔らかい口当たり感を有するチョコレート製品が得
られる。エネルギー消費に関して本発明により得られる有利な点は、チョコレー
トが甘味料としてスクロースを使用して製造される場合に特に顕著であるが、ま
たそれは甘味料がスクロース以外の場合にも顕著である。
本明細書および添付した特許請求の範囲において、用語「甘味料」は嵩および
甘味をチョコレート製品に付与する物質もしくは物質の混合物を意味し、またそ
れはスクロースもしくはスクロース置換体、例えばフルクトース、グルコース、
糖アルコール(例えば、キシリトール、ソルビトール、マニトール、ラクチトー
ル、マルチトール、イソマルターゼ)もしくはポリデキストロースもしくは糖ア

用いられるイヌリンまたはそれらの混合物である。
基本的なチョコレートの製造方法およびその個々のプロセス段階の最終製品の

最も慣用されているチョコレートの製造方法において、ベース塊はチョコレー
ト原材料(甘味料、カカオ液およびカカオバター、そしてミルクチョコレートが
製造される場合には、ミルクパウダー)から、それらを混合および混練して均一

本発明の目的は、従来方法よりも時間およびエネルギーの顕著な節約が達成で

これらの目的は、チョコレート塊の原材料の部分のみを混合、ローラー精製お

ー精製は、粉砕された甘味料が使用される場合には1段階で行われ、また結晶性
甘味料が使用される場合には2段階で行われる。もし超微細甘味料(粒子サイズ
≦約20μ)が使用される場合、このローラー精製段階は必要ない。
精練は慣用の方法で行われ得る。ペトホルド精練(塊の移動および噴霧)(Pe
tzholdt conche)中で60ないし65℃で16ないし18時間精練することによ
り、カカオ液から香味料以外のものそしてフルクリームおよびスキムミルクパウ
ダーから湿分が取り除かれる。
ローラー精製および精練された塊分の残った原材料中への混合は、通常当業者
に使用される装置、例えばペトホルド精練もしくはステファンミキサーにより行
われ得る。
本発明の方法において、全成分の約30ないし60%、好ましくは約40ない
し55%が精練される。精練時間が従来技術のものと同じであるにもかかわらず
(例えば、8ないし18時間)、同じ時間で必要量の2倍の量が精練され得るこ
とにより、時間およびエネルギーの節約が顕著に図れることになる。ローラー精
製された(超微細甘味料が使用されていない)塊の量は、慣用の方法によるもの
と同じであり;本発明の方法において成分は、2つに分けて別々にローラー精製
され得る。最終的な混合にかかる時間、即ち精練された塊、ローラー精製だけさ

もし甘味料のローラー精製段階においてカカオ液成分が存在することは、例え
ば、食味の理由のために好ましいと考えられる場合、精練された塊分はそれらの
