部に対して、2〜5重量部が望ましい。2週間ないし半
年間浸漬するが、半月ないし1ヵ月間浸漬するのが好適
である。浸漬後、残査をドライメッシュ法などの手段に
より分離して鳳仙花アルコール抽出液を得る。この鳳仙
花アルコール抽出液はナフトキノン誘導体(ビタミンK
様作用)、ケンフェロール(ナフトキノンの前駆体物
質)、フラボノイド、エルゴステロール(ビタミンD
の前駆体物質)などを主成分としている。また、人の血
液のpH(7.4前後)に近いpH(7.2)であると
いう特徴をもつ。更に、この鳳仙花アルコール抽出液

皮細胞を溶かして、その中に閉じ込められていたビタミ
ンK,ビタミンB、ビタミンA,ビタミンE,ビタミ
ンCがアルコール水溶液に溶出しやすくなる。従って、
オカラ酒の中には止血作用、カルシウムの吸収を助ける
ビタミンK,アミノ酸代謝に重要な役割とステロイドホ
ルモンの調節などに関与し、不足すると皮膚炎、貧血、
神経炎などになるビタミンB、ビタミンA,ビタミン
E、ビタミンCが多く含まれている。従って、体に有用
なビタミン類を多く含んだオカラ酒になる。オカラは大
変に腐敗しやすく、短時間で処理しなければならない
