【0007】藺草を苗を苗床で育て、11 月中旬から 1
月中旬に本田に植え付け、畳表を目的とする場合の肥料
を用い且つ同様な要領で育成する。畳表として用いる場
合には茎の長さが 1.3m 以上のものが良品とされるが、
本発明目的の場合には新芽の長さが根から 80cm 程度に
達した時点で刈り取るのが好ましい。刈り取った茎は水
洗される。水洗された藺草にはブランチング処理が施さ
れる。このブランチング処理は、藺草中に存在する可能
性のある酵素を不活性化させると共にアク抜きを行なう
ためであり、マイクロ波照射により行うのが簡便であ
り、所謂 「電子レンジ」を利用して実施することがで
きる。尚、ブランチング処理に先立ち、水洗藺草を細切
しておくのが処理効率を向上させる上で有効であり、こ
れは細断機を利用することにより実施することができ
る。この場合に、細切物は水中に投入され、ザルにて掬
い上げ、容器に移し、次いで上記のマイクロ波処理が行
われる。このマイクロ波処理後に乾燥処理が行われる。
乾燥は電子レンジから取り出された藺草に温風 (約 70
℃) を当てることにより、又は凍結乾燥することにより
行うことができるが、藺草に変質をもたらす可能性がな
い点と最終製品である藺草粉末の水に対する溶解性を更
に向上させる点において凍結乾燥が有利である。乾燥さ
せた藺草細切物は、次いで粉砕処理される。粉砕藺草の
粒度は 50 メッシュ程度であることが好ましい。
