【実施例】以下、実施例を挙げて本発明をさらに詳細に
説明するが、本発明はこれらの実施例に限定されるもの
ではない。 実施例1 ココナッツ(普通種)の胚乳をミキサーにとり、胚乳と
同重量の蒸 留水を添加して十分に攪拌・混合してスラ
リー状とした。このスラリーを凍結乾燥させ、乳鉢で粉
砕し、乾燥ココナッツ胚乳粉末標品を得た。これに重量
比で5〜10倍のクロロホルム・メタノール(3:1)
混液を加えて60分間攪拌・脱脂を行い、その残渣を回
収した。この脱脂操作を3回繰り返して行い、ココナッ
ツ胚乳から粗食物繊維画分を抽出した。次いで、上記粗
食物繊維画分に重量比で5〜10倍の熱水(80〜85
℃)を加えて2時間攪拌し、水溶性食物繊維の抽出を行
った。この熱水抽出操作を3回繰り返し行い、3回目の
抽出操作を行った後、熱水抽出液に容量比で5倍のメタ
ノールを加え、水溶性食物繊維を沈殿させて沈殿物を回
収し、水溶性食物繊維画分を得た。さらに5mMのリン
酸緩衝液(pH7.5)中で、水溶性食物繊維画分1g
あたり5mgのアルカリプロテアーゼ(花王(株)
製)、20〜50ユニット/mgを40℃で2時間作用
させることにより、除タンパク質処理を行った。除タン
パク質処理終了後、熱メタノールを添加して酵素を失活
させ、水溶性食物繊維を沈殿させた。この沈殿を回収
し、エタノール及びエーテルで洗浄した後、真空乾燥さ
せた。最後に、この繊維画分をさらに細かく粉砕し、粒
度48メッシュ以下の食物繊維組成物を得た。このよう
