去される。本実施例の場合、茶渋が付着する部材は揉手
3、葉ざらい4、竹ダク11部が主なものである。揉手
3、葉ざらい4の材質は鉄、竹ダク11の材質は竹であ
るが、茶渋の除去効果をより高める為に、揉手3、葉ざ
らい4の表面に剥離性の良い高分子材料でコーティング
したり、竹ダク11の材質を高分子材料で構成しても良
い。図3は揉捻機の正面断面概略図、図4は平面図であ
る。揉捻機の場合も工程終了前の5分前に散水管20に
開けられた、揉盤15方向の小穴から揉盤15上に15
秒間約2〓の水を散水する。散水信号は粗揉機と同様制
御盤(図示せず)から出され、散水電磁弁(図示せず)
を駆動する。工程が終了に近い為に揉盤15上には茶渋
が付着している。茶渋に水が浸潤し、軟らかくなると攪
拌された茶葉に擦られ揉盤上の茶渋が除去される。尚、
水量は水圧、散水管の配管径により異なる為に、散水時
