詳細には紫外線の影響による赤色魚介類の体色の黒変を
防止するため、麹、酸、コメン酸、ピロコメン酸及びそ
れらのエスエル類、マルトール、エチルマルトール、ヒ
ドロキシマルトール(3−ヒドロキシ−2−ヒドロキシ
−メチル−4(H)−ピラン−4−オン)などのピロン誘
導体を飼育海水、淡水又は飼料に配合して投与すること
により養殖中の赤色魚介類の体表面色を、紫外線照射に
よる黒変から防止し、もしくは元の色へ復色する方法に
関する。
