Abstract

PURPOSE:To provide a method for preservation in which housed cherries can be preserved in their harvested state for a long period and an apparatus for carrying out the method. CONSTITUTION:Cherries are housed in a preservation chamber 1 having heat insulating and water holding properties in a hermetically sealed state and the interior of the preservation chamber is always kept respectively at about 4 deg.C temperature and about 85% relative humidity to preserve the moisture content of the housed cherries within the range of 90-92%. The moisture content of the cherries is measured at a suitable interval of time to correct the relative humidity and carry out the forced circulation and replacement of indoor air. Thereby, ethylene is removed and discharged and indoor adhesive waterdrops are removed to inject a mixed gas of gaseous carbon dioxide with nitrogen at 4-5% ratio to fresh air into the preservation chamber. As a result, the housed cherries are prevented from naturally fermenting, putrefying and discoloring.

In order to solve the above-mentioned problems, the present invention stores cherries in a hermetically-sealed storage chamber having heat insulation and water retention. The storage room always keeps the room temperature around 4 ° C. and the relative humidity around 85% to store the water content of the stored cherries in the range of 90 to 92%. In addition, the water content of the cherries is measured at appropriate intervals to correct the relative humidity, and the indoor air is forcedly circulated and replaced to remove and discharge ethylene, as well as to remove water droplets adhering to the room. Then, a mixture of carbon dioxide gas and nitrogen is injected at 4 to 5% of fresh air. This prevents natural fermentation, spoilage, and discoloration of the stored cherries to achieve long-term storage.

That is, in order to store cherries with this apparatus, the cherries are put in a container having a predetermined volume having a ventilation gap and stored in the storage chamber 1 in a stacked state. Then, the main switch of the control switchboard 19 is turned on. As mentioned above, the room temperature is preset to around 4 ° C and the relative humidity to around 85%, but if the room temperature rises during storage and the temperature of the cherries themselves rises (heat of vaporization), When the detector 15 detects and operates the refrigerator 4, and when the humidity becomes insufficient, the humidity detector 16 detects and operates the humidifier 5 to prevent water shortage, and conversely when the humidity becomes excessive. When the humidity detector 16 senses, the fan 6 with a heater is operated to raise the ventilation temperature, open the difference from the absolute temperature for drainage and discharge, and satisfy the appropriate temperature and humidity conditions within the above-mentioned set range. Thus, the water content of the stored cherries is 90%.

Industrial Applicability As described above, the present invention shields cherries from the outside air and constantly maintains a suitable temperature around 4 ° C and a relative humidity around 85% suitable for storing fresh food. When it is detected, the refrigerator, humidifier, and heater fan are activated to perform automatic adjustment. On the other hand, the indoor air is intermittently forcedly circulated and replaced to remove and discharge ethylene generated from the cherries. In addition, it removes water droplets adhering to the inside of the room and also injects a mixture of carbon dioxide and nitrogen at 4 to 5% of the fresh air to suppress natural fermentation of cherries and prevent spoilage and discoloration. It becomes possible to maintain freshness at the time of harvest for a month. When the applicant conducted an experiment, the results shown in the following table were obtained.
