Description
本発明はグリチルリチン酸またはその塩類を含
む甘味料の呈味を改善する方法に関するものであ
る。その目的とするところは、クエン酸ナトリウ
ム、リンゴ酸ナトリウム、酒石酸ナトリウム、酢
酸ナトリウム等の有機酸塩とサイクロデキストリ
ンを併用添加することにより、グリチルリチン酸
またはその塩類、もしくはそれらを含む甘草抽出
物の呈味上の苦味、嫌味等の欠点を除去し経済的
に良質の甘味を得ることである。
グリチルリチンは豆科に属する多年草植物“甘
草”(Glycyrrhiza Glabra var Glandnifera)ま
たは同属植物の根茎中にある成分である。
この甘草は古くから漢方薬に使用され、解毒作
用、抗炎症作用などがあるといわれている。
また、甘草の主成分であるグリチルリチンは、
砂糖の約200倍の甘味をもつ物質であるが、チク
ロ、サツカリンナトリウム等の人工甘味料は安全
性の問題があるため、このグリチルリチンは安全
な天然甘味料として各分野へ使用されている。
しかし甘草の中にはグリチルリチン以外の多く
の苦味物質を含みグリチルリチンを抽出する時点
で同時に抽出される。またそれらを除去するため
精製すれば、大幅なコストアツプとなり食品の甘
味料としては、ほとんど使用出来ないといつて過
言でない。またグリチルリチンにクエン酸ナトリ
ウム等の有機酸塩、ステビオサイド等を添加する
ことにより、呈味の改善を行なう方法が知られて
いる。しかしグリチルリチンの後味をマスキング
する効果は認められるが苦味をマスキングする効
果は認められない。
本発明者らは、上述した事情に鑑み甘草抽出物
の苦味を除去する方法について鋭意検討した結
果、サイクロデキストリンを有機酸塩類と併用添
加することにより苦味物質をマスキング出来る事
実を発見し、本発明を完成した。
こゝでいう有機酸塩とはクエン酸ナトリウム、
リンゴ酸ナトリウム、酒石酸ナトリウム、酢酸ナ
トリウム等で、グリチルリチン酸またはその種類
1重量部に対して0.3〜100重量部の範囲で添加す
れば良く、好ましくは1〜4重量部が良好であ
る。
又ここでいうサイクロデキストリンとは6〜12
個のグルコースがα−1,4グルコシド結合で環
状に連なつた非還元性のマルトオリゴ糖で、
Bacillus属のある種の微生物から得られるサイク
ロデキストリン生成酵素を澱粉に作用させて得ら
れる。サイクロデキストリンには3種類あり、グ
ルコースが6個のα−、7個のβ−、8個のγ−
サイクロデキストリンがある。市場では主として
β−サイクロデキストリンの粉末か、α、β、γ
の混合物でサイクロデキストリン含量20%の水あ
め状のものが多く使用されている。
本発明では、β−サイクロデキストリンに効果
が認められた勿論β−サイクロデキストリンを含
むものであれば良い。グリチルリチンまたはその
塩類に対するサイクロデキストリンの添加量はグ
リチルリチンまたはその塩類1重量部あたり0.5
〜100重量部であれば良い。最適の添加量は甘草
抽出物の不純物の量によつて変動するために特定
は出来ないが、グリチルリチンまたは塩類の純度
が80〜98%の甘草抽出物を使用する場合には、グ
リチルリチンまたは塩類の100%純度換算1重量
部に対して1〜4重量部添加すれば良い。グリチ
ルリチンまたはその塩類の純度が50〜80%の甘草
抽出物を使用する場合には、グリチルリチンまた
は塩類の100%純度換算1重量部あたり10〜20重
量部の添加が望ましい。
次に実施例によつて本発明をさらに説明する。
実施例 1
甘草抽出物(グリチルリチン酸含量89.6%)の
0.5%水溶液にクエン酸ナトリウム、リンゴ酸ナ
トリウム、酒石酸ナトリウム、α,β,γ−サイ
クロデキストリンを組合わせて、甘草抽出物の苦
味、嫌味の改善度合を官能検査によつて比較し
た。
その結果を第1表に示した。
評価基準
AA…苦味嫌味ほぼ完全にマスクされている。
A…若干苦味を感じるが、良好である。
B…やや効果あり。
C…効果なし。
