Description
〔産業上の利用分野〕
この発明は、ゼリー成分と調味飲料成分をそれ
ぞれ容器に詰めて一組とし、喫飲時に上記ゼリー
成分の溶液を上記調味飲料成分の溶液中に滴下し
てゼリー成分の溶液をゲル化(凝固)させ、ゼリ
ーが分散されている調味飲料をつくりうる組合わ
せ菓子に関するものである。
〔従来の技術〕
一般に、即席飲料等の調味飲料とゼリーとは全
く別種のものとして取り扱われており、両者を混
用したものはみられない。すなわち、上記即席飲
料は、糖類、酸味類、粉末香料等を主成分とする
粉末であり、水に溶解することにより飲料とな
る。他方、ゼリーは、カラギナン、ゼラチン等の
ゲル化剤を用い、これを熱湯で溶解し冷却してゲ
ル化することにより製造されている。このよう
に、即席飲料とゼリーとはそれぞれ全く別種のも
のであるため、両者を組合わせて商品化するとい
うようなことは考えられていない。
〔発明が解決しようとする問題点〕
ところで、最近のように飲食物が豊富にでまわ
つている時代においては、従来の菓子だけではあ
きたらず、新規な菓子の提供が要望されており、
かつ単に味覚を満足させるのみではなく、視覚的
な面白さをも満足させうるようなものの提供が望
まれている。そのうえ、味覚に対する欲求も強く
なり、単一の菓子で2種類の味覚を同時に味わい
たいというような要望がみうけられる。
この発明は、このような事情に鑑み、即席飲料
の風味とゼリーの風味の2種類の風味を同時に味
わうことができ、かつ視覚的な面白さをも満足さ
せうるような新規な菓子の提供をその目的とする
ものである。
〔問題点を解決するための手段〕
上記の目的を達成するため、この発明は、下記
の(A)成分を主体とする容器詰めのゼリー成分と、
下記の(B)成分を主体としそれ自身の溶液に対する
上記ゼリー成分の溶液の滴下によりそのゼリー成
分を凝固させ、凝固模様を形成させる容器詰めの
調味飲料成分とを備えた組合わせ菓子をその要旨
とするものである。
(A) カルシウムイオンと会つてゼリー化するゲル
化剤を含むゼリー用粉末もしくはゼリー用溶
液。
(B) カルシウム塩類を含む調味粉末もしくは調味
溶液。
すなわち、上記の菓子は、ゼリー成分の容器と
調味飲料成分の容器を一組とし、喫飲時にゼリー
成分の溶液を調味飲料成分の溶液内に滴下してゼ
リー成分溶液を瞬時に凝固させ、その液相から固
相への相の瞬時の変化ならびに生成ゼリーの形状
を楽しむことができ、かつ生成ゼリーの風味と飲
料の風味との2種類の風味も味わいうるものであ
る。
上記容器詰めのゼリー成分は、上記(A)成分を主
体とするものである。ここで主体とするとは、全
体が(A)成分のみからなる場合も含めるものであ
る。そして、上記(A)成分にはゲル化剤が含まれて
いる。このゲル化剤の代表例としては、低メトキ
シペクチン、アルギン酸ソーダ、カラギナンがあ
げられる。これらは単独でもしくは併せて使用さ
れる。このようなゲル化剤以外にクエン酸等の酸
類やブドウ糖等の糖類、色素、香料等が適宜に配
合され、所定のゼリー成分となる。この場合、(A)
成分が溶液状のときには、ゼリー成分全体も溶液
状となり、粉末状のときは粉末状となる。ゼリー
成分が溶液状の場合には、そのまま調味飲料成分
の溶液中に滴下できるが、粉末状の場合にはコツ
プ等に入れ、水を注いて一旦溶液状にしてから滴
下することが行われる。
ゼリー成分が溶液状の場合には、充填容器に詰
めることが行われるが、その充填容器としては、
通常、密封容器が使用される。特にその密封容器
としてスポイト状の密封容器であつて、使用する
際にノズルの先端を切断してノズル孔を露呈させ
るようにするものを使用することが望ましい。こ
の場合、ノズル孔の口径が0.05〜5mmでノズル孔
を含むノズルの細径部の内径が上記ノズル孔の内
径と同程度であり、その長さが2〜30mmに設定さ
れているものを用いることが好ましい。ノズル部
分が上記のような寸法になつているスポイト状密
封容器を使用することにより、溶液状のゼリー成
分を上記スポイト状密封容器から滴下する際に、
滴下液が自動的に球形になる。そして、スポイト
状密封容器に対する押圧を強くすることにより連
続した線状にも簡単になしうるのである。
このような密封容器に溶液状のゼリー成分を密
封する際には、その溶液のPHが3.5以上、4.5以下
になるように酸類等を添加してPH調節することが
好ましい。すなわち、このようにPHを調節するこ
とにより、溶液状のゼリー成分に対する加熱殺菌
等の条件を緩和することができ、それによつて香
料等の変質を防止しうるようになるとともにゲル
化剤の安定性を保持しうるようになるからであ
る。
また、上記ゼリー成分においては、上記(A)成分
であるゲル化剤の含有量を0.5〜7.0%に設定する
ことが好ましい。ゲル化剤の含有量が上記範囲を
下まわると、ゼリー成分の溶液を調味飲料成分の
溶液中に滴下したときにゲル化しにくくなり、逆
に7.0%を超えるとゲル化剤の濃度が高くなりす
ぎ溶液の段階において、ゼリー成分溶液自体が半
ゲル状となり、調味飲料成分の溶液中に滴下する
際に半ば凝固した状態で落下するようになる。し
たがつて、液状物が調味飲料成分の溶液内に落下
した瞬間に凝固し、固形化するという相の変化の
面白さに欠けるようになる。
上記調味飲料成分は、カルシウム塩類を含む調
味粉末もしくは調味溶液を主体とするものであ
る。カルシウム塩類の代表例としては、乳酸カル
シウム、塩化カルシウム、リン酸カルシウム、炭
酸カルシウム、グルコン酸カルシウム、水酸化カ
ルシウムがあげられる。これらのカルシウム塩類
は単独で用いてもよいし、併用して用いてもよ
い。この調味飲料成分も上記ゼリー成分と同様、
その主体である上記(B)成分が粉末状であるときに
は粉末状になつており、溶液状であるときには溶
液状になつている。溶液状の場合には、上記ゼリ
ー成分の場合と同様密封容器に充填される。
調味飲料成分の主体となる上記(B)成分におい
て、カルシウム塩類以外の成分原料としては、通
常、即席飲料の成分原料が用いられる。すなわ
ち、クエン酸等の酸類や香料、色素、糖類が適宜
に使用される。特に、この調味飲料成分において
は、カルシウム塩類に由来するカルシウムイオン
の濃度が、水溶解時において0.03〜0.4重量%
(以下「%」と略す)になるように設定すること
が望ましい。すなわち、カルシウムイオンの濃度
が0.03%未満になると、ゼリー成分の溶液の滴下
時に、その溶液がゲル化しにくくなり、逆に0.4
%を超えるとカルシウム塩類の味が強くでるよう
になり、生成飲料の味覚を損なうようになるから
である。
上記ゼリー成分および調味飲料成分に色素を用
いる場合は、相互に色相の異なるものを用いるこ
とが好ましい。このようにすると、調味飲料成分
の溶液中において生成したゼリーが明瞭に識別で
きるようになるからである。また、上記成分の一
方に色素を用い、他方に用いない場合も同様の効
果が得られるようになる。
つぎに、この発明の組合わせ菓子の製造の一例
について説明する。まず、上記ゼリー成分を容器
に充填する。この場合、ゼリー成分が溶液状の場
合には、先に述べたようなスポイト状の密封容器
であつて、プラスチツク製のものに充填して密封
し、ついで充填液を殺菌することが行われる。ゼ
リー成分が粉末状の場合には、ポリエチレン等の
軟質なプラスチツク袋に充填し、密封することが
行われる。他方、調味飲料成分を上記とは別の他
の容器に充填する。この場合も、上記同様、調味
飲料成分が溶液状の場合にはプラスチツク製等の
密封容器に充填し密封して殺菌することが行われ
る。粉末状の場合にはポリエチレン袋等に密封す
ることが行われる。通常、調味飲料成分は、粉末
状に設定され、ゼリー成分は溶液状に設定され
る。
上記組合わせ菓子の喫飲は、まず、上記他方の
容器を開封し調味飲料成分をコツプ等の容器に入
れる。この場合、調味飲料成分が水溶液状のとき
はそのままコツプ等に注入すればよいが、粉末状
のときには、その粉末をコツプに入れたのち水を
注いで水溶液にする必要がある。つぎに、上記と
は別の容器を開封してそのゼリー成分を上記コツ
プ中の調味飲料成分の溶液中に滴下する。この滴
下は、ゼリー成分が溶液状であつてスポイト状密
封容器に密封されているときには、ノズルの先端
を切断してノズル孔を露呈させ、ついで密封容器
の胴部を押圧しノズル孔からゼリー成分溶液を押
し出すことにより行う。この場合、密封容器の胴
部に対する押圧を軽く行うと、ゼリー成分溶液は
自然に球状になつて滴下する。そして、その押圧
力を強めると線状になる。このようにしてゼリー
成分溶液が、コツプに入れられた調味飲料成分の
溶液内に落下すると、瞬時に、ゼリー成分溶液が
ゲル化し、初期の形状を保つて球状または線状に
なる。この場合、液状物が瞬時に固形物になると
いう相の変化の面白さが味わえ、また、ゼリー成
分溶液の落下の状態を調節することにより、生成
ゼリーの形状を変化させその状態を観察するとい
う面白さも味わうことができる。なお、ゼリー成
分が粉末状の場合には、それに水を加えて水溶液
状にし、これを底に穴のあいた容器等から上記調
味飲料成分の水溶液中に流下すること等が行われ
る。スポイト状密封容器に封入されたゼリー成分
の水溶液をコツプ中の調味飲料成分の水溶液中に
滴下して球状に凝固させる状態を第1図に示し、
粉末状のゼリー成分を水溶液状にし、これを底に
穴のあいた容器からコツプ中の調味飲料成分の水
溶液中に流下する状態を第2図に示す。これらの
図において、1はゼリー成分の溶液、2は容器、
3は調味飲料成分の溶液、4は生成したゼリーで
ある。第1図において、ゼリー成分の溶液1は球
状のゼリー4となり、ついで徐々にコツプの底部
に沈降する。第2図においては、ゼリー成分の溶
液1は線状のゼリー4′となり徐々にコツプの底
部に沈降する。
このようにして、ゼリーが生成し沈降している
調味飲料成分の水溶液は、そのまま飲用してその
風味を味わうことができ、同時に生成ゼリーの風
味も味わうことができる。すなわち、この発明の
組合わせ菓子によれば、上記のようにゼリー成分
の溶液のゲル化時における態様の面白さならびに
その生成ゼリーの形状の面白さを楽しめ、かつ飲
料の風味とゼリーの風味の2種類の風味を同時に
楽しむことができるのである。
〔発明の効果〕
以上のように、この発明の組合わせ菓子は、ゼ
リー成分の溶液のゲル化時における相の変化の態
様の面白さならびにその生成ゼリーの形状の面白
さを視覚により楽しむことができ、また飲料の風
味およびゼリーの風味の2種類の風味を楽しむこ
とができる。すなわち、この組合わせ菓子は、単
に菓子の風味を楽しむだけでなく、視覚的な面白
さをも同時に楽しむことができるのである。
つぎに、実施例について説明する。
実施例 1〜5
後記の第1表に示すゼリーシロツプ用の原料を
同表に示す水に溶解し、これを加熱してポリエチ
レン製のスポイト状容器に充填し密封した。この
スポイト状容器は使用時にノズルの先端を切断し
てノズル孔を露呈させるようになつているもので
あり、ノズル径の口径は0.5mmでノズル孔を含む
ノズルの細径部の内径がノズル孔の口径と同じで
あり、かつその長さが10mmに設定されている。上
記の溶液をスポイト状容器に充填し密封したの
ち、中心部の温度が85℃になるように45分間加熱
殺菌し、スポイト状容器入りゼリーシロツプをつ
くつた。
他方、後記の第1表に示す即席飲料用の原料を
同表に示す割合で配合し、この配合物を15gポリ
エチレン製の柔軟な袋に充填し密封した。
つぎに、上記のポリエチレン製袋を開封して即
席飲料配合物を100c.c.の水に溶解し、カルシウム
イオン入り飲料を作製した。そして、このカルシ
ウムイオン入り飲料が水に充分溶けて水溶液が透
明になつた段階で、上記スポイト状容器のノズル
の先端を切断してノズル孔を露呈させ、上記カル
シウムイオン入り飲料中にゼリーシロツプを滴下
した。この滴下によりゾル状のシロツプが瞬時に
ゲル化し、球状のゼリーになつた。この場合にお
いて、上記容器に対する加圧を調節し、間欠的に
シロツプを滴下すると球状のゼリーが生成し、上
記容器に対する加圧を強めると糸状(ところてん
状)の ゼリーが連続的に生成する。このように
スポイト状容器からのゼリーシロツプの滴下の状
態を変えることによりゼリーの形状を球状ないし
糸状の任意の形状に変化させることができ、視覚
的な面白さを楽しむことできる。そして、得られ
た即席飲料は、飲料自身の風味とゼリーのもつ風
味の2種類の風味を有しているのである。
上記のようにして、ゼリー凝固物が分散されて
いる即席飲料をつくるのに際して、ゼリーシロツ
プの粘度、シロツプのゲル性等を第1表に併せて
示した。

記実施例2ないし実施例4のように1.2〜6.0の範
囲に設定することが好ましい。
実施例 6〜10
即席飲料の乳酸カルシウムの量を第2表に示す
ように変えた。それ以外は実施例1〜5と同様に
してスポイト状容器入りのゼリーシロツプおよび
即席飲料をつくつた。得られたゼリーシロツプお
よび即席飲料を用い、上記実施例3と同様にして
ゼリー入りの即席飲料をつくつた。
この際における即席飲料の溶解性およびゼリー
