The baking mold 1 shown in FIG. 2 has hemispherical recesses, and generally has a structure in which a large number of recesses are arranged on an iron plate. This FIG. 2 depicts one of the recesses. With the concave portion of the baking mold 1 facing upward, pour the lower dough 2 into it, put the ingredient 3 in it, and put the upper dough 4 on it.
And the baking mold 1 is heated from below. The material heated in the baking mold 1 swells as shown in FIG.
It rises above the baking mold 1. This is rotated in the awl-backing device 6 as shown by arrows a and b, and baked in a spherical shape. Firing of the conventional example of octopus grilling described with reference to FIGS. 2 and 3 is carried out on a cottage industrial scale, but recently, a large-scale automatic octopus grilling machine has been developed to produce tens of thousands to several hundreds of thousands of products per day. Automatic machines are put to practical use.

Therefore, the bell-shaped octopus grill 7 as shown in FIG. 4 is fired in the automatic octopus grill. Reference numeral 8 indicated by a virtual line is a baking mold used in an automatic machine. FIG. 5 is an overall perspective view of the baking mold 8 in which a large number of recesses 8b are arranged. 8a is this baking mold 8
It is a metal fitting for mounting on the chain conveyor. FIG. 6 is a schematic view of an automatic octopus baking machine. A large number of baking molds 8 are arranged on the chain conveyor 21 (six of which are illustrated in FIG. 6), and while being sent in the direction of arrow A, they are sequentially coated below the oil spray 22 to be applied with oil, The lower dough is injected while passing under the dough injector 23, the octopus pieces, the cheese pieces, etc. are thrown through the lower part of the octopus and other throwing device 24, and the chopped cabbage is passed while passing under the vegetable throwing device 25. Etc. are thrown in, the upper fabric is hung while passing under the upper fabric injector 26, and further the chain conveyor 21
While proceeding to the right in the figure, the burner 27 heats and burns. Baking mold 8 for the chain conveyor 21

However, the details thereof will be omitted. The bell-shaped takoyaki 7 baked on an industrial scale of tens of thousands or more per day is frozen, packaged, and supplied on the distribution route. At a retail store, which is the end of distribution, the product is thawed, heated and sold. However, a bell-shaped octopus dish 7
Is not easy to heat. As an example, as shown in FIG. 7, it is placed on an iron plate 15 and heated by a burner 9 '. However, in this heating method, since only the bottom surface of the bell-shaped octopus grill 7 is heated, there are problems that the bottom surface is excessively scorched and the entire temperature is not uniform. In addition, the concept that "octopus grill is a spherical one" has permeated general users, and the bell-shaped octopus grill has a feeling of strangeness. For this reason, non-spherical octopus dumplings have low commercial value.

This improved baking method uses two baking molds having a recess deeper than a hemisphere, and one of the two baking molds is faced upward, and the lower dough is poured into the baking mold. , Put the ingredients, hang the upper dough, and heat from below one of the baking molds, the lower dough is almost baked, the peripheral part of the upper dough is half baked, and the central part of the upper dough is not yet baked In the state
The one baking mold is covered with the other baking mold, and the baking molds are turned upside down in a state where both baking molds are in close contact with each other, and the confectionery being baked in one baking mold is transferred to the other baking mold. It is dropped inside, and the other baking mold is heated from below and baked. Further, the firing apparatus proposed in order to easily carry out the above method and sufficiently bring out its effect has a recess deeper than a hemispherical shape, and the inner surface of the bottom portion thereof is substantially spherical. In a state where the two baking dies and the positioning means for facing the concave surfaces of the two baking dies to face each other and the two baking dies to face each other and closely contact each other, the two A mechanism for rotating the baking dies 180 degrees around the horizontal axis is provided. According to the above-mentioned method, in one baking mold having a recess deeper than a hemisphere, one confectionery (for example, octopus-baked) material is almost burned up in an inverted bell shape, and the central portion of the top surface is baked. Pass the state.

In this case, the inflection point of the other baking mold (where the concave portion becomes smaller in diameter as it goes downwards; an inflection point when viewed from a sectional view, an inflection point when viewed three-dimensionally, a horizontal circular shape Part), so-called drawing (press technical term)
The effect is similar to that, and the bell shape is partially transformed into a ball-like shape. The above-mentioned part that was a green burn in the other baking mold and hardened into a spherical shape and the part that has been subjected to the above-mentioned drawing deformation are connected to each other to have a shape similar to a sphere as a whole. Furthermore, at the final stage of baking, the confectionery material swells due to the action of steam generated by heating, but at this time, since it is dropped into the other baking mold, it is baked into a substantially spherical shape. Further, the above-mentioned apparatus is suitable for carrying out the above-mentioned method, since the two baking dies having the recesses deeper than the hemispherical shape can be positioned with respect to each other and turned upside down.

The above-mentioned lower dough 2 and the upper dough 4 are in contact with each other and integrated, and the portion in contact with the deep-baking mold A9 and its vicinity become the almost baked dough 11, and the vicinity of the central portion of the top surface is the freshly baked dough 1
It is the state of 2. In this state, a deep baking mold B10 is put on the deep baking mold A9. In this example, the deep-baking molds A and B are members having substantially the same shape and size, but the deep-baking mold A9 is provided with positioning projections 9a, and the deep-baking mold B10 is used for positioning. A hole 10a is provided. The above-mentioned positioning components are set so that the recesses of both deep-baking molds A and B face each other. When carrying out the firing apparatus of the invention according to the prior application, the positioning component is not limited to the projection and the hole, and any known positioning means can be arbitrarily selected and applied. May be When both deep-baking molds A and B are screwed together with hinges,
This is convenient because the positioning function is fulfilled, and the combination in a large number of deep-baking molds can be specified and the combination can be opened and closed freely.

形に焼成される。When both deep-baking molds A and B are faced to each other and in close contact with each other and rotated by 90 degrees about a horizontal rotation axis, the top and bottom are inverted to become as shown in FIG. The material being fired in the deep-fire mold A9 falls by its own weight as shown by arrow c,
It is transferred to the deep-baked mold B10. By this reversing operation, the material having the inverted bell shape (Fig. 9) is changed to the upright bell shape (Fig. 10), and the portion d corresponding to the edge of the bell is the inflection point of the deep-fire mold B10. Touch the arrow e
It is squeezed like this and deforms to a shape close to a spherical surface. On the other hand, since the raw dough 12 described with reference to FIG. 9 has not lost its fluidity, it flows as shown in FIG.
It comes into contact with the bottom surface, forms a spherical shape, and is baked. Before the baking and hardening proceed, the baked dough 11 is covered by its own weight, and a spherical octopus baking 13 is formed as shown in FIG. If heating is continued even while such molding is in progress, steam is swelled by the steam generated inside the octopus grill which is made into a sphere, and the octopus is pressed into the deep-baking mold B10 and baked into a beautiful spherical shape.

The material that has been partially fired in the deep-baking mold A9 is the deep-baking mold B10.
In order to be smoothly transferred to the inside, the deep-baking molds A and B must be positioned with high accuracy. However, if there is an error in this positioning, the deep-baking molds A and B must be deep-baked to the extent that this error can be covered. The diameter of the opening of the mold B10 may be set larger than the diameter of the opening of the mold A9. In the above-mentioned embodiment, since the octopus pieces were used as the ingredients 3, the confectionery called octopus grill was baked.

よび焼成装置を提供することを目的とする。According to the baking method according to the invention of the prior application described above, it is not necessary to manually turn the confectionery material during the baking work, and therefore, it is suitable for automation, and on an industrial scale. It is suitable for baking spherical confectionery. Also,
According to the invention device of the prior application, the invention method of the prior application can be implemented easily and reliably. After applying the invention of the earlier application, the present inventor transferred it to industrial production and asked for public evaluation, and it was confirmed that the intended purpose was generally achieved. As a result of further improvement research, the present inventor has confirmed that there is room for improvement as described below. That is, as shown in FIG. 9, a deep baking mold B is formed on the deep baking mold A9.
10 is turned over and inverted upside down as shown in FIG. 10 to drop the octopus grill in the middle of firing down as shown by arrow c to make it round, the peripheral part of the surface of the raw dough 12 in FIG. If d becomes scorched with respect to the baking mold, the arrow c in FIG. 10 may not be smoothly dropped. When the production of octopus is small, it is possible to eliminate the above-mentioned troubles caused by charring while manually assisting the troubles, but in the case of mass production of tens of thousands or more per day, see Fig. 5. As shown, one baking mold 8 is provided with a large number of concave portions 8b, and since firing of octopus grill is progressing in each of these large concave portions, it is extremely difficult for the operator to monitor and eliminate troubles. If you do not rely on human hands to prevent such problems, the merit of automating the octopus baking work will be diminished. Furthermore, many of the baking molds 8 shown in FIG.
Since it is automatically conveyed as shown in FIG. 6, if the whole apparatus is stopped due to the occurrence of trouble, a large number of octopus burns will occur and the damage amount will be high. Further, as shown in FIG. 9, to cover the deep-baking mold A9 with the deep-baking mold B10 and turn it upside down to round the product, and then to continue heating until the baking of the product is completed, in the state of FIG. Deep baking type B
You must preheat 10. If this preheating is not done, the raw dough 12 will be produced when the state shown in FIG. 10 is reached.
Does not start firing. The present invention has been made in view of the above circumstances, on the octopus grill that is half-baked in the baking mold, when covered with another baking mold and turned upside down, It is an object of the present invention to provide a firing method and a firing apparatus that allow octopus firing to be smoothly and reliably dropped in the two baking molds.

作動が繰り返される。Although not shown in FIG. 1, a gas burner is provided below the baking mold conveyed in the direction of arrow A,
Firing of octopus grills also progresses as the transportation progresses. Figure 1
In (A), when the baking mold 8f has advanced to the position shown in the drawing, the forming tool 18 descends in the direction of arrow e, and presses the octopus baking in the middle of baking as shown in (B) in the drawing. The hemispherical shell-shaped portion of this molding tool is configured to fit into the opening of the baking mold, and scrapes off the peripheral portion d of the surface of the raw baked dough 12 shown in FIG. Separate from the baking mold. When the forming tool 18 is lifted as shown by the arrow f, the octopus baking that is being baked in the baking mold 8f is performed as shown in FIG.
As shown in (C), it becomes an incorrect spherical shape. Using the half-baked octopus grill as described above in combination with the operation of forming an incorrect spherical shape with the forming tool 18, the baking mold 8d is raised at the stage of FIG. (B) and covered with the baking mold 8c waiting above. , Both of these baking molds 8c and 8d are rotated together as shown by the arc arrow R so that they are turned upside down. FIG. 1 (C) shows a state in which the inversion has been completed, with the baking mold 8c at the bottom and the baking mold 8d at the top. The stage of FIG. 1B (the baking mold 8d before turning upside down)
The octopus baking (in the middle of baking) inside is separated from the charring with the baking mold when passing under the molding tool 18, and has an irregular spherical shape. Therefore, as shown in FIG. When is turned over, the octopus grill inside falls smoothly and surely and becomes almost spherical. However, in the present invention, the true spherical shape means a shape that visually feels “round”. Next, as shown in FIG. 7D, while receiving the octopus grill in the baking mold 8c, the baking mold 8c is lowered as shown by an arrow g, and the baking molds 8c, 8e, 8f and 8h are left while leaving the baking mold 8d.
Is sent in the direction of arrow A, as shown in FIG. Comparing the state of the above (E) figure with the state of the above (A) figure, the true spherical octopus grill is being sent out into the baking die 8c and the subsequent baking die 8i It is the same except that it is progressing. Specifically, the succeeding baking mold 8d advances to the position of the baking mold 8c in FIG.
The succeeding baking mold 8e advances to the position of the baking mold 8d in the figure, and the succeeding baking mold 8f moves to the position of the baking mold 8e in the figure (A). The succeeding baking mold 8g moves to the position of the baking mold 8f in the figure (A). Subsequent baking mold 8h at the position of baking mold 8g in the figure (A) Subsequent baking mold 8i at the position of baking mold 8h in the figure
Is approaching. In this way, one pitch progresses, and thereafter, the same operation is sequentially repeated.

Since it is a baking mold, it is in a high temperature state, which is a so-called “mold baking” state. In this way, the baking molds that have been heated while being conveyed and have fulfilled the firing function are used one by one as "baking molds on the receiving side in the upside down process" by utilizing the residual heat. For this reason, even if a special burner is not provided to heat the waiting baking mold, the baking molds are replaced one after another and combined with the immediately following baking mold to achieve "reception in upside down". The octopus grill, which plays a role and is being fired into a true sphere, is put in to proceed, and the true sphere octopus is baked. The baking mold (for example, the baking mold 8d in FIG. 8E) that has received the octopus baking from the latest preceding baking mold waits for the arrival of the latest succeeding baking mold while maintaining the residual heat.

In the operation of combining the pair of baking molds 8c and 8d, the reason why the lower baking mold 8d that has arrived is raised without lowering the waiting upper baking mold 8c is that the baking mold 8d is lifted. This is for removing the carriage from the mechanism (for example, the chain conveyor 21 (see FIG. 6)) that has been conveyed, and performing the vertical reversal operation of the arc arrow R in the upper space where there is no interfering obstacle.

Its operating cycle is relatively fast. Therefore, the time required for the empty baking mold to wait for the arrival of the immediately succeeding baking mold is about several seconds. The baking mold has a shape as shown in FIG. 5 and has a considerable heat capacity. Therefore, natural heat dissipation and temperature reduction during standby can be ignored.

実用的効果を奏する。As described above, when the present invention is applied to a spherical confectionery manufacturing machine such as an automatic octopus baking facility, a plurality of baking molds having recesses deeper than hemispherical shapes are used.
One of the baking dies in the pair of baking dies faces upward, the lower dough is poured into it, the ingredients are put, the upper dough is hung, and the lower dough is heated from below, and the lower dough is almost baked. In a state where the peripheral portion of the upper dough is half baked and the central portion of the upper dough is not yet baked, the one baking mold is covered with the other baking mold, and the two baking molds are closely adhered to each other. Upside down, when dropping the confectionery being baked in one baking mold into the other baking mold, the one baking mold and the spherical confectionery being baked therein (for example, The octopus baking) is separated, and the above-described dropping operation is smoothly and surely performed, so that a true spherical confectionery is baked, which is an excellent practical effect.
