望の大きさに粉砕されうるようになるまででよい。乾燥
を加熱乾燥法で行なう場合は、卵殻膜はケラチンを主成
分とする蛋白質であることから高温による変性を避ける
ために、例えば100℃で60分間程度とすればよい。
また、卵殻膜が卵殻から採取したばかりの生のもの、あ
るいはそれに近い状態にある場合は、直接凍結乾燥をし
