Field of the Invention The present invention relates to a water-soluble composition containing higher fatty alcohols which is uniformly solubilized under neutral and acidic conditions and has extremely high solubilization stability, and a method for producing the same. In recent years, higher fatty alcohols, which are components of vegetable waxes, have attracted attention due to their physiologically active effects. They are,

It is known to have excellent physiologically active effects such as alleviating muscle pain. As described above, higher fatty alcohols having 20 or more carbon atoms are increasingly being evaluated highly for their future potential due to their physiologically active effects. Therefore, it would be expected to add higher fatty alcohols to foods, especially beverages.

散安定性の点に問題があった。BACKGROUND OF THE INVENTION Higher fatty alcohols have extremely high melting points (70 to 91° C.) and are difficult to dissolve in most substances, so it has been difficult to use them as uniformly dispersed and stable solutions. For this reason, higher fatty alcohols are only used in solid foods such as candy and ice cream, and are added to foods by sprinkling them as a fine powder or melting and kneading them. Therefore, in order to make it easier to ingest higher fatty alcohols, liquefaction of higher fatty alcohols has become an issue. As a method for liquefying higher fatty alcohols, for example, octacosanol is added alone or in the form of a mixture dissolved in oil or fat to an aqueous solution containing polyglycerol fatty acid ester as an emulsifier, and octacosanol is emulsified using a homomixer. A method for obtaining an emulsified or solubilized octacosanol-containing water-soluble composition (Japanese Unexamined Patent Publication No. 61-263937), in which a higher fatty alcohol is added to water containing a surfactant, heated above the melting point of the higher fatty alcohol, and an emulsifying machine is used. (Japanese Unexamined Patent Publication No. 61-31064) or by dissolving a higher alcohol in a lower alcohol, then precipitating the higher alcohol by mixing with water, and then removing the lower alcohol, and then adding a surfactant. A method for dispersing higher alcohols has been proposed (Japanese Unexamined Patent Publication No. 1983-99334), which is characterized by dispersing the precipitated higher alcohols in water. However, when emulsions produced by these methods are used in beverages, higher fatty alcohols are liberated in the upper part or precipitate during storage, resulting in problems with dispersion stability.

We have surprisingly found that higher fatty alcohols can be solubilized uniformly and extremely stably in water by solubilizing them through a special procedure of removing alcohol, and based on this finding, we have completed the present invention. reached.

If it is less than 0.085% by weight, no physiological effects can be expected. Furthermore, if the amount of higher fatty alcohol blended exceeds 10% by weight, it becomes difficult to stably solubilize the higher fatty alcohol. In the present invention, the surfactant has a polymerization degree of 4 to 1.
Monoesters of 0 polyglycerol with caprylic acid, lauric acid or oleic acid can be used. As the surfactant used in the present invention, a mixture of two or more types of monoesters consisting of polyglycerin of various degrees of polymerization and various of the above-mentioned organic acids can be used.

A suitable amount is 1 to 300 parts by weight, preferably 1 to 200 parts by weight, per 1 part by weight of the higher fatty alcohol. If the amount is less than 1 part by weight per 1 part by weight of higher fatty alcohol, it will be difficult to stably solubilize the higher fatty alcohol, and if it exceeds 300 parts by weight, the flavor will be poor. As the stabilizer used in the present invention, saponins such as Quillaja saponin, gum arabic, xanthan gum, tragacanth gum, guar gum, locust bean gum, etc. can be used alone or in combination of two or more, but from the viewpoint of the influence on the viscosity of the composition, saponins Particularly preferred are the following.

The lower alcohols used in the present invention are methanol,

Next, the raw materials shown in Table 3 were added to the emulsion and emulsified for about 5 minutes. This emulsion was filled into a 200 ml can and sterilized at 85° C. for 20 minutes to obtain a higher fatty alcohol-containing beverage, which was then subjected to the same test as in Example 1. The results are shown in Table 4.

果を第4表に示すExample 4 Higher fatty alcohol having the composition shown in Table 1 (containing 12.5% by weight of octacosanol)2.
5 g and 25 g of decaglycerin monooleate as a surfactant were dissolved and mixed in 50 g of ethanol. Separately, 4.5 g of Quillaja saponin was dissolved in 218 ml of water.
After raising the temperature of this aqueous solution to about 90°C, the mixture of higher fatty alcohols mentioned above is added and mixed well, and the lower alcohols are evaporated while emulsifying using a propeller-type stirrer, and the higher fatty alcohols are turned into a homogeneous liquid. An alcohol-containing water-soluble composition was obtained. The obtained solubilized liquid was filled into a 200 ml can and sterilized at 85° C. for 20 minutes to obtain a higher fatty alcohol-containing water-soluble composition, and the same test as in Example 1 was conducted. The results are shown in Table 4.

It is possible to obtain a water-soluble composition containing a higher fatty alcohol that maintains a highly solubilized state, and has the advantage that it does not impair the flavor of foods, is not toxic, and can be widely applied to various foods as a food additive containing higher fatty alcohols. be.
